As much corn salad as you like
200 g sweet potatoes
1 tsp Organic Coconut Oil by foodspring
For the dressing:
1 tbsp olive oil
1 tbsp balsamic vinegar
1 pinch of salt
1 pinch of pepper
1/2 avocado

Preparing the salad with sweet potato

  • Peel the sweet potato and cut it into small pieces. Fry with coconut oil for about 10 minutes in a pan. Season the sweet potato with salt and pepper.
  • Wash your salad and put it into a bowl. Wash the tomatoes, cut into pieces and add them to the salad.
  • Stir your dressing and mix it into the salad.
  • Arrange your salad on a plate, lay the sweet potato pieces on top and enjoy!


Try this salad  with some fried courgette or with pumpkin in the autumn. Add some avocado if you want to eat more healthy fats.
